Getting really thirsty isn't unusual while fasting, esp. during weight loss. I don't know why you'd get it on Fast-5 but not on ADF though. It might have to do with the tea or coffee though: both of them can be dehydrating. I had to give up on tea during fasting times, because it turned out it bothered me quite a bit.
I get full after eating one meal too. I think the body *does* adapt, and one of the ways it adapts is to get a lot more efficient. And it knows exactly how much food it really does need. What Dr. Bert recommends in the book is to wait a month before trying to tweak things too much: you might have some swings of appetite and energy, but eventually things settle down.
If you are worried about too few calories though, you might want to do the opposite of what many of us do and eat the high-calorie stuff first. Starting a meal with a salad works great for people who eat too much, but if you think you are eating too little, try starting the meal with, say, fish and chips or whatever high-cal food works for you?
If you feel good though and are not turning into skin and bones, I wouldn't worry about it. When my daughter charted how many calories she eats a day for a class, she came out *way* low ... she really doesn't eat all that much. But she's tall and athletic and muscular. I kind of think the "calorie charts" are assuming people have very poor digestion or poor quality food or some such, or most people in our country are just eating way too much food.
