Julienned peas-in-the-pod make this fresh and healthy springtime
salad taste extra sweet.
Prep: 40 min
Start to Finish: 40 man
10 to 12 oz (4 cups)snow peas, stems trimmed
1/2 fennel bulb, fronds reserved
1 cup frozen baby peas, thawed
1/2 cup chopped walnuts
3 Tbsp fresh lemon juice
1/4 tsp kosher salt
1 small clove garlic, minced
1 tsp sugar
2 Tbsp olive oil
Zest of 1 lemon
1. Cut snow peas lengthwise into thin strips. Julienne the fennel
by slicing the bulb thinly, then cutting the pieces into strips.
Combine snow peas, fennel, peas, walnuts and zest in a bowl. Add
about 2 Tbsp coarsely chopped fennel fronds.
2. In a separate bowl, whisk together lemon juice, salt, garlic
and sugar. Drizzle in olive oil, whisking constantly. Dress salad
with vinaigrette to taste and season with ground black pepper.
