*Cucumber – Tomato Salad*

*Ingredients:*
- ½ cup rice vinegar
- 3 tbsp Splenda
- 3 cups unpeeled cucumber, quartered and sliced
- 2 cups chopped tomato
- ½ cup chopped red onion
- salt & pepper to taste
*Directions:*
1. In a large bowl, combine rice vinegar and Splenda
2. Add cucumbers, tomato and onion and mix well
3. Season to taste with salt & pepper
4. Refrigerate, covered, 1 to 2 hours to allow flavors to blend.
