I am not a doctor, but I was with him when he had the surgery. I got the
pamphlet out where he had it done. It was chronic ear surgery that he had
done. The inner ear houses the mastoid bone. The mastoid cavity got an
infection or some kind of trauma to it.Without the surgery, it could have
kill him. There was infection in that and nothing would clear it up. So they
had to remove it.He doesn't have no hearing and very little balance. He
stays dizzy most of the time.It is a surgery i had never heard of until he
had to have it done.I never will forget how bad a shape he was in. He
couldn't even stand up without getting sick and throwing up. But anyway, he
still has vertigo and stays dizzy most of the time. Take care.

Black Eyed Pea and Pork Stew - 41g Carbs, 11g Fiber, 10g Sugar

Cooking Time: 120 Minutes
This recipe makes great leftovers.

1 slice bacon, (diced)
1 medium onion, (diced)
2 medium carrots, (peeled and diced)
16 oz pork tenderloin, (cut into 1/2 inch cubes)
2 (15 oz can) no salt added black eyed peas (drained and rinsed)
3/4 tsp salt
Fresh ground black pepper (to taste)
2 Tbsp rubbed sage
3 cups water
1 Tbsp maple syrup
8 oz kale (thinly sliced crosswise)

Preheat the oven to 325 degrees F.

Place the bacon in a large pot or Dutch oven over medium high heat.
Cook for about 2 minutes, stirring frequently.

Add the onions and cook for about 3 minutes, stirring frequently.

Add the carrots and cook for one minute.

Add the pork tenderloin and cook, stirring frequently, for 5 minutes.

Add the black eyed peas, salt, pepper, sage, water and maple syrup.
Stir, cover and place in the oven. Stir every 20 minutes or so.

After the stew has cooked for 80 minutes add the kale. Cook for
20 minutes and serve.

I love all three of these ingredients together. Usually I wait and have
them for my New Year's Day meal, but this stew says you can have pork,
black eyes and greens any time. The prep takes a few minutes and there's
so little effort you can make this stew any day of the year.

Dollar for dollar this is one of the best cuts of meat going. Pork
tenderloin is lean and flavorful. You can roast it, braise it, grill
it, or cut it into medallions for small filets – almost anything. This
recipe can be doubled for two tenderloins since in most grocery stores
they are sold in 2 packs, with each tenderloin in the pack being about
a pound. Ask the butcher if you want only one.

There will be a variable amount of fat and I trim this carefully. Most
important is the silverskin. This is a thin layer of fascia at the head
of the tenderloin on one side. It has to be trimmed because it is tough
and fibrous.

Lay the tenderloin on the cutting board with the silverskin side up.
Press gently on the top to flatten the meat. Slip the point of your filet
knife under the fascia and cut toward the end of the tenderloin. Keep
the pressure slightly upward and the silverskin will easily cut away
from the meat.

1 teaspoon canola oil
1 large onion -- diced

1/2 teaspoon cumin
28 ounces canned crushed tomatoes
3/4 cup chicken stock -- or spicy smoked turkey stock
1 tablespoon lime juice
4 cups shredded cooked chicken -- or turkey

Place the jalapenos cut-side down on a broiler pan. Broil on low for 2 minutes or until they start to brown. Allow to cool, and then dice.

In a nonstick skillet, heat the oil. Add the onions, garlic, and jalapenos, and saute until the onions are soft, about 5 minutes.

Add the onion mixture to a 4-quart slow cooker. Add the remaining spices, crushed tomatoes, stock and lime juice. Cook on low for 5 to 6 hours, then add the shredded meat. Turn up to high and cook for an additional hour.

AuthorNote: this recipe is an excellent way to use up leftover chicken or turkey, and it makes enough filling for two 9x13-inch pans (8 enchiladas per dish) of enchiladas. Make one pan and freeze the other for another time.

Don't Overkill: leave at least an inch of headroom in the slow cooker. The lid needs to fit tightly for the slow cooker to cook properly; otherwise the liquid ingredients may boil over, leaving you with a potentially dangerous situation and quite a mess.

Saute the onions, garlic, carrots, parsnips, celery, and beef in a large nonstick skillet until the ground beef is browned. Drain off any excess fat and discard it. Place the mixture into around 4-quart slow cooker. Add the stock, paprika, rosemary, Worcestershire sauce, savory, salt and pepper. Stir.

Cook on low for 6-8 hours. If the meat mixture still looks very wet, create a slurry by mixing together 1 tablespoon cornstarch and 1 tablespoon water. Stir this into the meat mixture.

In a medium bowl, mash the parsley and potatoes using a potato masher. Spread on top of the ground beef mixture in the slow cooker. Cover and cook on high for 30 to 60 minutes or until the potatoes are warmed through.

Serves 6

AuthorNote: Cottage Pie is similar to the more familiar Shepherd's Pie, but it uses beef instead of lamb. This version uses lots of vegetables and lean meats.

Save Time in the Morning: take a few minutes the night before cooking to cut up any vegetables you need for a recipe. Place them in an airtight container or plastic bag and refrigerate until morning. Measure any dried spices and place them in a small container on the counter until needed.
