Fresh Spinach and Feta Cheese Sauce

1 large onion -- peeled and very finely sliced
2 tablespoons olive oil
8 (to 10) large fresh spinach leaves -- shredded
10 ounces feta cheese -- crumbled
6 tablespoons vegetable stock
freshly ground black pepper
To serve: cooked pasta to serve 4 people

Gently saute onion in oil until soft but not brown.

Stir in spinach, feta cheese, stock and pepper and bring to a boil. Continue stirring until the cheese has begun to melt into the stock. The consistency should be creamy but lumpy.

Toss together with pasta and serve at once.

Makes 4 servings.

This sauce can be served with any kind of noodles or lasagnette. Start the meal with grilled vegetables or a plate of [favorite] and melon.
