Fresh Bean and Tomato Sauce

1/2 pound fresh lima beans -- or frozen
1/2 pound fresh green beans -- trimmed and cut into long thin strips
Tuscan Tomato and Basil Sauce: -- below
14 ounces ripe tomatoes -- or 1 (14-oz can)
1/2 small carrot -- peeled and grated
salt and freshly ground pepper to taste
2 (to 3) sprigs fresh basil leaves -- roughly chopped
3 tablespoons whipping cream -- optional
To serve: cooked pasta to serve 4 people
freshly grated Parmesan cheese
fresh ground black pepper

Blanch lima beans in boiling water for 3 minutes and slip off skins if necessary.

Return to the pan with green beans and cook another 5-6 minutes until tender.

Tuscan Tomato and Basil Sauce: Place tomatoes, carrot, salt and pepper in a saucepan. Bring to a boil, cover and cook over medium heat 15-20 minutes until fairly thick. Puree in a blender. Add basil leaves.

Add cream, if using, and drained beans.

Add pasta and toss well together. Serve with Parmesan cheese and black pepper.

Makes 4 servings.

Tiny fresh green beans are mixed with fresh lima bean to give an attractive appearance to this simple tagliatelle sauce from San Gimignano in the heart of Tuscany. From the restaurants in the main square you can see two of the seven distinctive towers of this famous walled hill town. The towers were built by successful citizens to show off their wealth.
