Chouquettes au Fromage - Little Burgundian Cheese Pastries - 24g Carbs, 1g Fiber

5 tablespoons butter
1 pinch salt -- large pinch
3/4 cup water
1 cup all-purpose flour
3 eggs
1 cup diced Swiss cheese -- (4 ounces) such as Emmental, Gruyere, or Beaufort
1 pinch cayenne pepper -- small pinch
Preheat the oven to 350F.
In a large saucepan, combine the butter, salt, and water. Bring to a boil over high heat then remove from heat. Immediately add the flour all at once, then mix in well with a wooden spoon.
Return the heat and, stirring with a wooden spoon, cook until the ball of dough comes away easily at the sides, 3 to 4 minutes.
Beat in the eggs one at a time. Remove from heat and beat in the cheese and cayenne.
Arrange spoonfuls on a greased baking sheet. Bake for about 20 to 30 minutes, or until golden and crisp-edged, no longer doughy inside, and hollow-sounding when rapped with a spoon.
Makes 4 servings.
VARIATION:
Gourgere (Cheese Pastry Ring) - On a greased baking sheet, spoon the cheese pastry into a ring shape. Bake for 30 to 40 minutes, or until golden and lightly browned and no longer doughy inside.
From humble Burgundian bistros to Paris's chic Benoit, these little pastries might appear at your table to nibble on while you look over the menu. They're also good with a bunch of sweet, juicy purple grapes after the meal, as a cheese course.
These are very easy to whip together, and they perfume your kitchens with their buttery scent as they bake. Any red Burgundian wine would be good to sip along.
Though traditionally prepared with nutty Gruyere-type cheeses, I think the pastries would also be lovely with Asiago.
