1 1/2 cups drained cooked chickpeas -- (to 2 cups)
2 tablespoons minced fresh parsley
2 garlic cloves -- minced
2 pinches ground cumin -- or to taste
2 tablespoons olive oil -- (to 3 T.)
1 teaspoon balsamic vinegar
juice of 1/2 lemon
salt and freshly ground pepper to taste
Combine all the ingredients. Cover and refrigerate until ready to serve.
Makes 4 servings.
This exciting little dish, all the more so for its simplicity. Its whiff of cumin takes it beyond the expected parsley vinaigrette. Serve as part of a selection of little salads to begin the meal - terrible for a couscous or a grilled vegetable feast.
