Icelandic Flatbread

1 cup rye flour
1 cup whole wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup water
In a mixing bowl (or dough machine, bread machine, heavy duty mixer or food processor), combine flours, baking powder and salt.
Slowly add water and knead until dough is smooth.
Form into 15 to 18 golf ball-sized balls. Flatten each with a rolling pin or tortilla press into a thin 6 to 7-inch circle.
Cook over medium heat on an ungreased griddle or an electric tortilla press until they are speckled and done, about 1 minute on each side.
Makes 15 to 18.
These flatbreads are reminiscent of Norwegian Flatbrods in that the flours are the same. These flatbreads, however, are meant to be eaten warm and soft.
