Creamed Prosciutto Sauce

1/4 cup butter
1/2 cup whipping cream
2 ounces prosciutto -- or Parma ham, minced
grated nutmeg
salt and freshly ground pepper -- to taste
3 ounces freshly grated Parmesan cheese -- (3/4 cup)
To serve: -- cooked pasta for 4 people

Melt butter in a large saucepan and add cream. Bring mixture to a boil and cook for 1 minute.

Add prosciutto, nutmeg, salt and pepper. Check the balance of flavors, then add cheese.

Toss pasta in the sauce and serve at once with more black pepper and Parmesan cheese on the side.

Makes 4 servings.

This rich sauce is excellent with long flat or tubular pasta. It is much easier to chop the prosciutto if you ask the butcher to cut it in one thick piece rather than in the usual thin slices.
