Everyday Meat Sauce

2 slices bacon -- diced (optional)
2 tablespoons olive oil
2 garlic cloves -- peeled and minced
1 onion -- peeled and minced
1 pound lean ground beef
2 tablespoons tomato puree
1/4 teaspoon dried oregano -- or wild marjoram
salt and freshly ground pepper to taste
1 pinch grated nutmeg -- (optional)
14 ounces tomatoes, canned -- (1 can)
1/4 cup red wine -- or beef stock
To serve: cooked pasta to serve 4 people
Saute diced bacon, if using, in the oil and add garlic and onion. Brown lightly.
Add ground beef and cook for 3-4 minutes until lightly browned.
Add remaining sauce ingredients and bring to a boil. Simmer, uncovered, for 20 minutes, stirring occasionally.
Toss pasta in sauce and serve.
Makes 4 servings.
If you do not have all the ingredients for a classic Bolognese Sauce, here is a simple but tasty meat sauce for spaghetti. For variety, add 1/2 cup minced button mushrooms.
