Anchovy and Garlic Sauce

6 tablespoons olive oil
3 garlic cloves -- peeled and crushed
2 ounces anchovy fillets -- (1 can) drained and chopped
To serve: -- cooked pasta for 4 people
freshly ground black pepper
Heat oil in a saucepan and saute garlic for 1 minute.
Add anchovies and continue cooking for 1-2 minutes over medium heat until fish flakes, making a creamy sauce.
Toss pasta in this sauce and serve with freshly ground black pepper.
Makes 4 servings.
VARIATIONS:
Add a spoonful of capers or chopped black olives to the pasta.
This is a classic Italian sauce from the South, where it is usually served with long round pasta. It has a punchy but not overpowering flavor. If you think the anchovies will be too strong for you, rinse them in cold water before using. For an even milder taste, soak them in milk for a few minutes before draining, drying and chopping.
