Tuna Sauce

1 can tuna in oil
2 tablespoons extra virgin olive oil
3 tablespoons chopped fresh parsley
1/2 cup vegetable stock
salt and freshly ground pepper to taste
To serve: cooked pasta to serve 4 people
Empty tuna a its oil into a saucepan. Mash with a fork and add olive oil. Cook gently for 5 minutes.
Add parsley, stock, salt and pepper and cook for 5 minutes.
Spoon over the pasta or toss together and serve at once with more black pepper.
Makes 4 servings.
This is the simplest of all the tuna based sauces. It is popular all over Southern Italy where it usually served with spaghetti and garnished with a handful of small black olives and a wedge of lemon. Add a basket of hearty country bread and spoon any extra sauce over bread chunks if you are still hungry! Use tuna canned in oil, not water.
