Salmon Sweet Potato Casserole - 36.4g Carbs, 5.5g Fiber, 1.5g Sugar

Casseroles are the perfect dish for potluck dinners and outdoor picnics because you do not need an y special dishes to serve them - you can simply bring your slow cooker insert along. This recipe for salmon sweet potato casserole is not only easy to prepare, but it is something you have probably never tried before. The combination of seafood and sweet potatoes may seem strange, but there is something about these two flavors that blends perfectly to create a delicious, satisfying casserole.

Prep Time: 10 min

 

1 lb salmon fillet, cooked

5 medium sweet potatoes

1 small onion, diced

3 Tbsp almond flour

6 eggs

1/4 cup water

Salt, to taste

Pepper, to taste

 

1. Coat the inside of the slow cooker with spray.

 

2. Peel and slice the sweet potatoes then layer half of them inside the slow cooker.

 

3. Season the sweet potatoes with salt and pepper then sprinkle on half the almond flour.

 

4. Break up the cooked salmon fillet with a fork and sprinkle half along with half of the diced onion on top of the sweet potatoes in the slow cooker.

 

5. Repeat to create a second layer each of the sweet potatoes then salmon and onions.

 

6. Beat the eggs with the water and pour over the ingredients in the slow cooker.

 

7. Cover an cook on low heat for 6 to 8 hours until the sweet potatoes are tender.

 

Cooking Tips: To cook the salmon yourself, simply brush it with a little olive oil and place it on a baking tray in a the oven at 350 degrees F for 10 to 15 minutes. when the salmon is cooked, it should be moist and flakey.
