Pad Thai Noodles with Creamy Sesame Dressing - 23g Carbs, 7g Fiber

2 medium zucchini -- spiralized or julienned
1 cup broccoli florets
2 heads baby bok Choy -- quartered lengthwise
1/4 red bell pepper -- thinly sliced
1 cup thinly sliced carrots
1 cup mung bean sprouts
2 scallions -- thinly sliced on a diagonal
1 cup Creamy Sesame Dressing -- (see page 108)
Combine all the ingredients in a large bowl and toss to coat evenly with the dressing.
Serves 2-4
This raw dish is loosely based on traditional pad Thai, but it's creamier with a tahini-based dressing.
Creamy Sesame Dressing - Detox
1/4 cup raw tahini paste
1 tablespoon tamarind paste
1/2 cup warm water
1 tablespoon chile garlic paste
5 drops liquid stevia -- (5 to 8)
1 lime -- zest and juice
Salt and pepper to taste
Combine all the ingredients and blend in a high-speed blender until smooth.
MAKES 1 CUP (8 two-tablespoon servings)
