Spicy Jambalaya - 19.2g Carbs, 3.3g Fiber, 4.7g Sugar

1/4 cup hot sauce
3 Tbsp Cajun seasoning
2 cups okra (optional)
1/2 - 1 head cauliflower
1 pkg spicy Andouille sausage
4 oz chicken, diced
1 lb large shrimp, de-veined and raw
2 bay leafs
2 cloves garlic, diced
1 large can organic diced tomatoes, drained (14 1/2 oz)
1 large onion, chopped
4 peppers
5 cups chicken broth

1. Mix the bay leaves, hot sauce, Cajun Seasoning, chicken, garlic, onion and chopped peppers together in the crock pot. Add the chicken stock/broth. Set on Low for 6 hours.

2. Pulse the cauliflower in the food processor until it resembles rice. Set aside.

3. Add the sausage in the crock pot after 30 minutes. 20 minutes before it is done, Add the cauliflower rice and the shrimp.

Using low sodium chicken broth, no salt tomatoes, and no salt Cajun Seasoning. One head cauliflower used.
