Creole Cauli Rice - 14.7g Carbs, 3.2g Fiber, 4.8g Sugar

We all love rice, but the carbs don't really love us back. This is a great recipe to trick yourself into thinking you're eating rice, but it's really cauliflower!
1 head cauliflower
2 Tbsp olive oil
1 cup red pepper, diced
1 cup green pepper, diced
1 cup white onion, diced
1 bunch scallions, chopped
4 cloves garlic
1/2 tsp thyme
1 Tbsp Bayou Creole Seasoning
2 cup vegetable stock
1. Chop cauliflower into "cauli-rice" using a top blade food processor. You can also use a cheese grater for a similar result.
2. Heat olive oil over medium heat, and add red & green pepper, onion, and scallions. Saute until soft
3. Stir in garlic, thyme, and Bayou Creole Seasoning.
4. Add cauli-rice and vegetable stock.
5. Simmer for 30 minutes.
