1 large navel oranges
3/4 cup water -- plus 2 tablespoons
2 spiced chai tea bags
1 cup uncooked instant brown rice
1/4 teaspoon salt
Grate rind from orange to measure 1 teaspoon. Squeeze juice from orange to measure 2 tablespoons. Combine 2 T. orange juice, water, and tea bags in a medium saucepan; bring to a boil. Add rice; cover and reduce heat; simmer for 5 minutes. Remove from heat; let stand, covered, 5 minutes. Remove tea bags; stir in orange rind and 1/4 t. salt.
Makes 4 servings (1/2 cup rice each serving)
