2 large mangoes -- peeled, cut in medium dice
1 tablespoon fresh ginger root -- finely chopped
1 tablespoon balsamic vinegar
freshly ground black pepper

Mix together all ingredients. Add a hint of black pepper.

Makes 1 1/2 cups (6 one-quarter cup servings)

Sweet and gingery, full-bodied and fruity, this fresh mango salsa will enliven even the simplest of entrees.

Serve with poached, grilled or roasted [favorites]. A teaspoon of chili powder can be added to the salsa if used with [favorites].
