Fresh Raspberry and Beet Salsa

1 medium red beet
6 ounces fresh raspberries -- (1/2 pint)
1 tablespoon red onion -- finely chopped
1 tablespoon light brown sugar
1 tablespoon raspberry vinegar
1 tablespoon freshly squeezed orange juice
salt and freshly ground pepper
Trim off the ends without cutting into the beet. Place in a microwave-safe bowl, cover, and microwave on high until tender when pieced with a for fork, about 4 to 5 minutes. (Alternatively, boil until tender.) Cool, then grate finely.
Combine the beet with the raspberries, onion, sugar, vinegar, and orange juice. Season with salt and pepper to taste. Refrigerate until needed.
Makes about 2 cups.
This bright red sauce is a perfect balance of sweet and sour flavors with a bold raspberry aroma.
