Fresh Tomato Salsa

2 large vine-ripened beefsteak tomatoes -- or heirloom tomatoes, very large
2 garlic cloves -- finely diced
3 thin scallions -- white part only, finely chopped
1/2 cup cilantro -- finely chopped
1/2 cup fresh parsley -- finely chopped
juice of 1 lime
2 tablespoons poblano pepper -- cored, seeded, finely chopped
salt and freshly ground pepper
Stir together the tomatoes, garlic, scallions, cilantro, parsley, lime juice, and poblano. Season with salt and pepper to taste.
Makes about 2 cups.
Beefsteak or heirloom tomatoes add a chunkiness to this salsa that supports a good deal of onion flavor and the taste of two herbs, and hot pepper.
Serve with TexMex and Mexican meals or alongside grilled cheese sandwiches.
