1/2 small pineapple -- peeled, cored, minced to a loose saucelike texture (save the juices that accumulate under the pineapple during chopping)
1 medium yellow tomato -- peeled, seeded, finely chopped
1 tablespoon fresh ginger root -- peeled and finely chopped
1 shallot -- peeled, finely chopped
1/2 lime -- juice only
1 tablespoon honey
1 tablespoon fresh basil -- finely chopped
1/4 teaspoon saffron -- or 1/2 t. turmeric (dissolved in 2 T. of the pineapple juice that accumulated under the pineapple during chopping)
Mix everything together.
Makes 3 cups.
This pale yellow salsa has a subtle pineapple flavor with hints of shallot, ginger, and basil, all gently sweetened with honey.
