1/4 medium honeydew melon -- peeled, seeded, 1/4" diced
1/2 small cucumber -- ends trimmed & discarded, peeled, seeded, 1/4" dice
2 tomatillos -- husks removed, 1/4" dice
1/2 jalapeno chile pepper -- finely chopped (optional)
juice of 1 lime
3 tablespoons fresh tarragon -- or mint, finely chopped
freshly ground black pepper
Mix everything together. Taste, and adjust the flavoring. Add more jalapeno for a hotter salsa.
Makes about 2 cups.
Light and refreshing, this delicately colored salsa is sweet, with just a hint of hotness.
Serve with fresh fruits and fruit salads, poached [favorites] or with grilled [favorites].
