2 large yellow vine-ripened tomatoes -- cored, finely diced
1 large garlic clove -- finely chopped
2 pieces fresh ginger root -- (or 1-two inch piece) finely grated
2 small shallots -- finely chopped
1 tablespoon sherry vinegar
salt and freshly ground pepper
Gently stir together the tomato, garlic, ginger, shallot, and sherry vinegar. Season with salt and pepper to taste.
Makes about 2 cups.
This golden orange salsa has a sweet tomato flavor with intense accents of ginger and sherry vinegar. It is an elegant and exciting variation on the traditional red tomato salsa.
Serve with grilled vegetables.
