1 7 1/2 oz can salmon, drained
4 green onions, trimmed and sliced diagonally
2 Tbsp reduced-calorie soy sauce
1 red pepper, trimmed and sliced
1 cup snow peas
1 cup sliced mushrooms
2 cups cooked rice
Flake salmon; set aside.
Spray non-stick pan or wok with cooking spray and heat over medium heat.
Add onions, soy sauce and pepper; toss. Cover and cook 2 minutes. Add
salmon, peas and mushrooms; toss. Cover and cook 1 minute. Serve over rice.
