My private take is that it has to do with eggs. Eggs happen to have some really good stuff in them, and fats that can protect the heart. In America, eggs are mainly ONLY eaten for breakfast, so people who skip breakfast, skip eggs. Not so in Japan or France, where eggs are often part of lunch or dinner. Can you spell "Souffle"?
Yeah, I know the hype about eggs bad for hearts. If you look at the countries that eat a lot of eggs though ... they aren't exactly dying of heart disease a lot. Lab studies that theorize about this or that ingredient, don't take into account the whole food and the effect it has on people. When volunteers are fed more eggs, mostly they just lose weight.
And yes, follow the money. The snack-makers have been working for years to convince everyone to eat more food ... all day long. When I was a kid, we never snacked much at all, except to bring a bag of popcorn to the movies. Snacking is rarer in Europe too. The snack-makers are working hard just to get people into the habit of "snacking" between meals,so they can sell more chips. Breakfast cereal makers need us to eat more breakfast cereal too. When else would you eat the stuff? It tastes pretty bad.
Right now everyone is convinced that everyone needs to eat like a baby ... once every 3 hours or so. No one has ever eaten like that in history! One or two meals was the norm.
