Starlight Diner Cream of Cabbage Soup

1 1/2 quarts chicken stock -- vegetarian version
1 1/2 quarts water
1 cup chopped onion
1 cup chopped celery
1/2 cup chopped carrot
3 Tablespoons Miner's chicken base -- vegetarian version
1 Tablespoon salt
1/2 teaspoon white pepper
1 1/2 teaspoons garlic powder
1/2 medium head cabbage -- shredded
1 cup sauerkraut -- rinsed and drained
Soup Thickener:
1 1/2 cups sour cream
1 1/2 cups flour
1 1/2 cups milk -- to 2 cups
Place stock, water, onion, celery & carrot in large (4 qt.) soup pot and
bring to the boil. Add 3 T. Miner's chicken base and stir in. Add 1 T.
salt, 1/2 t. white pepper, 1 1/2 t. garlic powder, 1/2 medium head
shredded cabbage and 1 c. sauerkraut, rinsed and drained. Cook,
uncovered, 1 hour.
CREAM OF CABBAGE SOUP THICKENER: (this is the trick that makes this
simple soup so special)
Mix together in a bowl 1 1/2 c. sour cream and 1 1/2 c. flour. Add 1 1/2
-2 c. milk and mix with a wire whisk to the consistency of a thick
milkshake (the difference in the amount of milk determines the thickness
of the soup). Add 1 drop egg shade coloring and heat through.
Makes 12 bowls or 16 cups
