Avocado with Smoky Lentils - 37.2g Carbs, 18.3g Fiber, 4.8g Sugar

1/4 cup Puy lentils
1 Tbsp extra virgin olive oil
1 small onion, halved and sliced
2 garlic cloves, chopped
Pinch red pepper flakes
1/4 tsp sugar
1/2 cup canned tomatoes
Salt
Freshly grounded pepper
1/8 tsp smoked paprika
2 avocados
1 Tbsp cilantro, chopped

1. Add the lentils to 2 -3 cups of boiling water, and cook for about 15 minutes. Then drain.

2. While the lentils are cooking, heat the oil and fry the onion till translucent. Add garlic and red pepper flakes and cook for another minute.

3. Add tomatoes, sugar, smoked paprika and season with salt and pepper, let it all simmer for 5-10 minutes. Taste and adjust the seasoning.

4. Add the lentils to tomato sauce, stir and take of the heat.

5. Cut the avocados in half, core, arrange on the plate, top with smoky lentils and chopped cilantro.
