Slow Cooker Balsamic Chicken and Spinach - 3 pts

3/4 pound boneless skinless chicken breast -- cut into strips
1/4 cup balsamic vinegar
4 garlic cloves -- minced
1 tablespoon minced fresh oregano
1 tablespoon minced fresh Italian parsley
1/2 teaspoon freshly ground black pepper
5 ounces baby spinach

Place the chicken, vinegar, garlic and spices into a 4-quart slow cooker. Stir. Cook on low for 6 hours.

Stir in the baby spinach and continue to cook until it starts to wilt, about 15 minutes. Stir before serving.

Serves 4
