Chinese Style Chicken Breasts - 4g Carbs, 0g Fiber
4 boneless, skinless chicken breasts
2 Tbsp. light soy sauce
2 Tbsp. rice vinegar
2 Tbsp. sherry
1/4 cup chicken broth
1 tsp. sesame oil
2 tsp. minced fresh ginger
3 green onions sliced
1 clove garlic minced
1 Tbsp. water
1 tsp corn starch
Preheat oven to 375 degrees. Arrange chicken breasts in a glass baking dish. In a small bowl, stir together soy sauce, vinegar, sherry, broth, sesame oil, ginger, garlic and onions. Pour the sauce over the chicken. Bake for 20 to 30 minutes, or until the chicken is no longer pink in the center. Remove the chicken from the baking dish and keep warm. Pour the sauce into a small saucepan. In a small bowl, combine 1 tbsp. water with the cornstarch. Add to the pan and cook, stirring constantly until thickened. Serve over chicken.
