Steamed Dumplings
1 14 ounce package vegetarian sausage
4 spring onions, finely chopped
2 tsps. minced ginger (or 1 tsp dried, ground ginger)
3 tsps. light or reduced sodium soy sauce
2 tsps. sesame oil
1 16 ounce package won ton wrappers (will use about 20 wrappers)
1 cup Chinese style pea pods, thinly sliced
Combine vegetarian sausage, onion, ginger, soy sauce and sesame oil together in a bowl. Mix well. Lay out several won ton wrappers, then put 1 1/2 tablespoons of the mixture in the center of each wrapper.
Place a few slices of pea pod in the dumplings and pinch the won ton wrappers closed at the top.
Place dumplings side by side into a steamer basket (a metal colander or cake cooling rack will also work) sitting in a large sauce pan with a little boiling water in the bottom. Cover and steam for about 5 minutes until the wrappers look moist.
Serve with little dishes of hot Asian-style mustard and /or light soy sauce.
Makes about 20 dumplings.
