Garlic Roasted Squash - 14.5g Carbs, 3.6g Fiber, 7.9g Sugar

Zucchini, yellow squash, sweet onion, and garlic, tossed together and baked.

Prep Time: 5 min
Cook Time: 30 min
Difficulty: Easy
Servings: 8

6 each medium zucchini
6 each Squash, summer, all types, fresh, medium
1 each Onion, sweet, fresh
12 each medium garlic cloves
2 tsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 each cooking spray

Preheat oven to 450 degrees F.

In medium bowl combine zucchini, yellow squash, sweet onion, garlic,
oil, salt, and pepper. Toss well.

Lightly coat shallow roasting pan with cooking spray.

Arrange squash mixture evenly in pan and bake 30 minutes or until
vegetables are tender, stirring every 10 minutes.
