I agree with Heather -- glucometers are relatively inexpensive ($20-$25) and are available without a prescription, so it's good to find out for sure the low blood glucose is truly the problem. Chances are good you will find that your glucose is over 85, and not the culprit.
Any 5 hour window is fine, so 2-7pm should work just great, as is shifting windows for a noon lunch. After a noon meeting, don't be surprised if you get hungrier than usual at noon the next day -- the body's 24 hour clock thinks it's time to eat again. If you ignore the 24-hour hungries, they'll go away and you can get back to your usual schedule. We call this sort of adjustment "sliding windows" and some people do fine with them -- you can always select a more rigorous schedule if you find it's not working or you're eating outside of your window.
