Hey, I like variety because I like the taste of things. I don't like to restrict anything from my diet, because then I crave it, and then it all goes to hell.
I don't have any health problems that would indicate cutting anything out of my diet. I have friends who have gone gluten-free, and I think - hey, good for them, but HELL if I'm going to do that. I can't STAND being so anal about what goes into my mouth, or doesn't. It actually makes me angry. So I don't do it, and I'm much happier. :-)
My only gripe about 'lack of variety' is that sometimes - man, that grapefruit sounds good. But I can't eat a grapefruit, AND the burger that also sounded good, AND the scrambled eggs, AND, AND, AND. I just don't have room in my stomach. So I'll eat the grapefruit etc. one night, the burger meal the next, and the eggs and bacon the next.
I love eggs for dinner, actually. I made stir-fry one night (which my hubby usually makes, as he's much better at cooking), and I remembered that my mom used to make a scrambled-eggs-and-rice dish that I loved, so I added some scrambled eggs to the rice and veggies - my kids LOVED it, told me it was 'better than Daddy's!' HA. So now it's kind of a staple around here. I love eggs in any form.
I have to laugh at the keeping chickens idea, though. I have friends that do that, my husband's family used to keep chickens and turkeys - and they do make good pets if you give them regular attention.
I just have less than NO desire to live that way. I'm a suburban girl, through and through - just stuck in the country, and not by my choice!
There are many ways to live - and isn't it nice to have the choice?
