Read the book "The Carbohydrate Addicts Diet." It talks alot about multiple insulin spikes per day and how with each meal it just goes higher and stays higher. Their diet doesn't work because ALL food causes an insulin reaction. Im just like you in that I can easily eat 2500cals in one sitting and if I eat again im just not going to lose weight. The psychological advantage of eating what you want everyday and getting the benefits of dieting without actually dieting makes you wonder why no one else does it on top of how amazing you feel. Anytime I stray from it I feel terrible and just go back to it the next day.
