[Healthy_Recipes_For_Diabetic_Friends] BLUEBERRIES WITH LEMON CREAM

 

I have a question on this recipe which came from a Diabetic Newsletter.
There aren't any sugars listed in the nutritional info and yet yogurt has
sugars listed on the container. I know that milk, cheese, yogurt, honey have
sugars that can be "measured" to some extent. I've not found it on their web
site either. My problem is that they aren't having me check my sugar
levels regularly and are relying on the A1C. I'm trying to get it down lower to
stay off meds longer. I'm relying heavily on the listed sugars! (Another
question beneath the recipe!)


BLUEBERRIES WITH LEMON CREAM

Yield: 4 servings (1/2 cup each)

INGREDIENTS

- 4 ounces reduced-fat cream cheese (Neufchatel)
- 3/4 cup low-fat vanilla yogurt
- 1 teaspoon honey
- 2 teaspoons freshly grated lemon zest
- 2 cups fresh blueberries

DIRECTIONS

Using a fork, break up cream cheese in a medium bowl.
Drain off any liquid from the yogurt; add yogurt to the bowl along with
honey. Using an electric mixer, beat at high speed until light and creamy.
Stir in lemon zest.

Layer the lemon cream and blueberries in dessert dishes or wine glasses.
If not serving immediately, cover and refrigerate for up to 8 hours.

Calories: 156, Fat: 7 g, Cholesterol: 22 mg, Carbohydrate: 19 g, Protein:
6 g, Fiber: 2 g, Sodium: 151 mg
Diabetic Exchanges: 1 Fruit, 1 Fat

Nutritional Information Per Serving (3/4 cup):
Calories: 159, Fat: 4 g, Cholesterol: 4 mg, Carbohydrate: 25 g, Protein: 8
g, Fiber: 3 g, Sodium: 60 mg
Diabetic Exchanges: 1 Starch, 1 Vegetable, 1 Fat

**My last question is why 2 nutritional infos? A mistake or what? Under
the title of the recipe, it says 1/2 c serving. So do I assume they made a
mistake in the newsletter editing and didn't remove the 3/4 cup one being it
lists starch and vegetable?

Thank you for any help you can provide. I want to try this and suspect that
I'll use it with other fruits. Also, I have dairy goats and make my own
yogurt and soft cheeses, so I know my fats are higher and yet I don't add any
sugars. I only have what comes naturally in the milk. So I need to have a
good idea what I'm doing with this recipe.

I hope you all enjoy the recipe! I would think it was a good fruit dip,
etc.
