Slow Cooker Indian Palak Tofu

14 ounces extra-firm tofu
1 tablespoon canola oil
1 teaspoon cumin seeds
2 cloves garlic -- minced
2 jalapeño chilies -- minced
3/4 pound red skin potatoes -- diced
1/2 teaspoon ground ginger
3/4 teaspoon garam masala
1 pound frozen cut-leaf spinach
1/4 cup fresh cilantro
Cut the tofu into 1/2" cubes. Set aside.
Heat the oil in a nonstick skillet. Saute the cumin seeds for 1 minute,
then add the garlic and jalapenos. Saute until fragrant, then add the tofu
and potatoes. Saute for 3 minutes. add the ginger, garam masala, frozen
spinach, and cilantro. Saute 1 minute.
Pour the mixture into a 4-quart slow cooker and cook for 4 hours on LOW.
Serves 4
