Mediterranean Tuna Salad - 21g Carbs, 8g Carbs

4 tablespoons canned tomato puree
2 tablespoons fresh lemon juice
1 tablespoon white wine vinegar
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
15 1/2 ounces canned kidney beans, drained, rinsed
14 ounces water packed tuna fish, drained
6 1/2 ounces canned artichoke hearts without oil, rinsed, halved
4 ounces water-packed roasted red peppers, sliced
1/4 cup chopped cucumber
12 medium cherry tomatoes, halved
2 tablespoons chopped fresh parsley

Mix together tomato puree, lemon juice and vinegar in a large salad bowl; season to taste with salt and pepper.

Add remaining ingredients to bowl and toss to mix. Cover and chill until ready to serve.

Makes 4 servings.
