1/4 cup fresh lemon juice
2 teaspoons honey
1 small clove garlic -- finely chopped
kosher salt and black pepper
1 cup chopped fresh mint
4 scallions -- chopped
In a small bowl, whisk together the oil, lemon juice, honey, garlic, ½
teaspoon salt, and ¼ teaspoon pepper.
Stir in the mint and scallions.
Makes 1 1/4 cups (serves 8)
