Creamy Dill Pasta Salad - 21g Carbs, 2g Fiber
Salad:
3 cups bow tie pasta, cooked and drained
1 large carrot, grated
1 cup broccoli florets
2 green onions, sliced
1/2 cup each: chopped celery, red bell pepper, green bell pepper and cucumber
1/4 cup chopped, fresh parsley
Dressing:
2/3 cup plain, fat-free yogurt
1/4 cup light mayonnaise
2 Tbsp. fresh lemon juice
2 tsp. dried dill or 2 Tbsp. fresh dill
1/4 tsp. garlic powder
In a medium bowl, combine all salad ingredients and mix well.
Combine all dressing ingredients in a small bowl and mix with a wire whisk. Add salt and pepper to taste.
Combine salad mixture with dressing and toss lightly to mix. Refrigerate until ready to serve.
Makes 8 servings.
