1/3 cup cider vinegar -- or white vinegar
1/4 cup mild soy sauce
3 garlic cloves -- minced
2 bay leaves
1 teaspoon black peppercorns
1 tablespoon sugar
1/2 cup water
Mix ingredients together in a small pot over medium-heat. Let the sauce thicken for 5 minutes. Use hot or refrigerate, covered.
Makes 1 1/4 cups (5 one-quarter cup servings).
ChupaNote: Wonderful over rice, with beans, baked potatoes, or steamed vegetables; very good as a marinade for tofu.
