West Indian Garlic Cod - 2g Carbs, 0.3g Fiber, 0.2g Sugar

Servings: 4

4 cod steaks, about 4 oz each
1/2 tsp salt
1 Tbsp garlic, crushed
2 Tbsp shredded coconut
3 Tbsp cilantro, finely chopped
1/4 cup biryani paste, or other curry-based paste

Rub cod with salt. In a bowl, combine remaining ingredients.

Press coconut mixture into both sides of cod. Place each piece on
large piece of foil, fold, and seal. Place on grill over medium
heat for 20 minutes, turning once. If a grill isn't available,
bake in oven at 350 degrees F for 20 minutes.
