2 limes, zest grated, juiced
1/2 bunch chives, snipped
1 tsp ginger, grated
2 chilies, finely chopped
2 1/4 Tbsp olive oil
6 chicken breast fillets
1/2 cup whole egg mayonnaise
Combine olive oil and chilies together. Grill or
pan-fry chicken over a moderate heat, basting with
chili oil during cooking. To make ginger-lime
mayonnaise, combine remaining ingredients. Serve
chicken with prepared mayonnaise.
