The headaches I think usually relate to cortisol. Your body
cranks it out when you don't eat, to cause stored glycogen
to go into the blood. Sometimes the body overshoots and
releases too much cortisol, which causes symptoms
that people believe are "low blood sugar". I always did. But
then I bought a glucometer and guess what? When I was
shaky and headachy, my BG was *high*. The rest of the time
it was normal.

Sweets, for some people, do tend to get the BG out of
control and cause a rebound. They can also change
bacterial growth in the gut which causes it's own problems.
Only solution I know of is to experiment. Keep a journal
and see what works!

For me what works is to break my fast with something
high in protein, esp. fish or eggs. If I eat sweets or
straight starches, I eat them with konjac, which slows
down their assimilation so they act less like pure sugar
and don't cause that hunger rebound (or gut problems,
for me). Also I try to get plenty of water, and I take
fish oil for Omega-3's.
