Quick Mexican-Style Soup - 4g Carbs, 2g Fiber

Serves: 4
Serving Size: 3/4 cup
14-oz can fat-free, low-sodium chicken broth
1 large tomato, seeded and diced
4-oz can chopped mild green chiles
1/4 cup snipped fresh cilantro
1 to 2 Tbsp fresh lime juice
1/2 Tbsp olive oil (extra-virgin preferred)
3/4 tsp ground cumin
In a medium saucepan, bring the broth to a boil over high heat.
Stir in the tomato and green chiles. Return to a boil. Remove
from the heat.
Stir in the remaining ingredients. Let stand, covered, for 5
minutes to allow the flavors to blend.
