Game Marinade (for Tofu or TVP)

3 1/8 cups full-bodied red wine -- (1 bottle) or 750 milliliters
6 dried juniper berries -- crushed
1 pinch Quatre Epices -- (French four spices, also sold as Beau Monde)
1 pinch ground nutmeg
1/4 cup olive oil
2 tablespoons red wine vinegar
1 bay leaf
Stir together all the ingredients.
Yields about 3 cups.
The flavors of this marinade are hearty enough to stand up even to wild [favorites]. It is equally as good with [favorites]. Pour it over [favorite] and marinate at least 12 hours, turning the [favorite] occasionally. Longer marination may be necessary for less expensive cuts of [favorites]. Tightly covered, this marinade will keep in the refrigerator for one week.
ChupaNote: drain tofu. Place in container with cover. Pour enough marinade to cover by at least 1/2-inch. Freeze overnight until solid. Let defrost in refrigerator. Drain and save marinade. Squeeze marinade from tofu. Use as preferred, but this is a wonderful marinade for grilled tofu or tofu kebabs. Boil marinade to reduce to syrup, and serve hot with kebabs as side sauce. For TVP: rehydrate according to instructions using marinade. Drain off marinade after hydration, boil and reduce to a syrup. Serve with TVP.
