1 pound red radishes -- or Japanese daikon
1 1/2 teaspoons salt
1/4 cup distilled white vinegar -- or native Philippine vinegar (sukang paombong)
2 teaspoons sugar
1/2 teaspoon black pepper
1 medium tomato -- diced (optional)
1 medium onion -- diced (optional)
Peel and slice the radishes paper-thin. Sprinkle with salt and work the salt in by hand. Rinse well and drain.
Mix the vinegar, sugar, and black pepper together in a cup and pour over the radishes. Refrigerate at least 1 hour.
Add the diced tomatoes and onions to the radishes just before serving, if desired. Serve cold.
Makes 3-4 servings.
This is a delicious vegetable side dish. Its flavor improves if it is allowed to refrigerate for a day or two before serving.
