Watermelon Salsa - 4g Carbs

From: The All New Good Housekeeping Cookbook
Yield: Makes about 3 cups

1 piece (2 1/2 lb) watermelon, seeded and chopped
1 Tbsp finely chopped red onion
1 Tbsp chopped fresh cilantro
2 tsp seeded, minced jalapeno chile
2 Tbsp fresh lime juice
1/8 tsp salt

In medium bowl, gently stir watermelon, onion,
cilantro, jalapeno, lime juice, and salt until
well mixed. Cover and refrigerate at least
1 hour to blend flavors or up to 2 days.

Yield: Makes about 3 cups
Serving Size: 1/4 cup
