Sallies Creamy Garlic Sauce

2 tablespoons butter -- (1/2 stick)
3 garlic cloves -- minced
2 tablespoons flour
1/2 cup stock -- or broth (white or light colored)
1/4 cup dry white wine
1 large egg yolk -- beaten
2 tablespoons fresh lemon juice
1/2 cup heavy cream -- whipped to stiff peaks
salt and freshly ground pepper to taste

Melt the butter in a medium-size heavy saucepan over medium heat. Add the garlic and cook until soft, about 2 minutes. Stir in the flour, then the reduced stock and wine. Cook until very thick, about 5 to 6 minutes, stirring occasionally.

Whisk about 1/2 cup of the hot sauce into the beaten egg yolk, then stir the mixture back into the sauce. Add the lemon juice, then fold in the whipped cream and season well with salt and pepper. Serve hot.

Yield: about 1 cup.
