As a child living on the island of Mallorca, Hallie used to wander the fields that separated her family's tiny postage stamp of a village from the sea. No big hotels then! Occasionally, a villager working with his donkeys would share his morning snack, Pan Bali. Forty-five years later, this morning treat of fresh tomatoes and garlic rubbed on hearty bread still exists. Pan Bali is offered for breakfast all over Catalonia in small, modest hostels as well as in posher, well-known hotels. Enjoy the do-it-yourself experience of making Pan Bali, and pass platters of soy ham or sausage to go with it.
